CARDINAL BUONVISI

This wine is made from selected grapes dried on mats in a big open shed. The raisins are fermented when, after the appropriate amount of water has evaporated, they have a sugar content of 26-30 percent. Fermentation has to be very slow and prolonged. The result of all this is a wine with a high alcohol content  (15 - 16 percent) that preserves the flavour of the grapes unaltered. It is an ancient method developed in the Garfagnana mountains above Lucca, where the cold climate and stony soil, capable of producing only wines with a very low alcohol content, led the inhabitants to put their wits to work to obtain a wine that, if not abundant, would at least be of superior quality to its many equivalent from the hills around Lucca. The small amount of “Cardinal” grapes qualifies the wine to commemorate and pay homage to one of the most illustrious members of the Buonvisi family, the famous old Lucca family that founded the Forci vineyards back in the Middle Ages. Enjoyed sparingly, it is excellent with strongly flavoured foods like red meat, game and aged cheeses.
