Production zone: Hills located 10 km north of Lucca, with calcareous soil, at an altitude between 150 and 300 meters above sea level with a southern exposure and temperature ranging between 0 and 30 degrees.

System of production: Olives of the following types: Frantonio, Leccino, Pendolino and Maolino. Picked by hand from the branch before they are fully ripe, they are still not very juicy but have that intense flavour that they lose later on. Crushed and pressed just once at room temperature, in our own press.

Harvest and pressing season: November and December.           

Characteristics: Low acidity oil (0.3 – 0.5) that is more healthful and digestible, with high fluidity so that it yields more. The colour is green with a strong flavour and sharpness when new, mellowing to golden yellow with a more delicate flavour and aroma as the weather begins to warm. Stored in the dark in underground vats lined with slate, the ideal type of stone to ensure impermeability. The green glass of the bottles protects the colour from the light and keeps the oil from turning rancid.

Duration: about 2 years.

Production: average production of an olive tree is about 12 kg. of olives, with an average output of oil on the order of 15%.
Annual oil production is between 8,000 and 10,000 liters.

Packed in bottles: 1 liter, 0.500 and 0.250 liters
Cartons of 6, 3, 2 or 1 bottles.

The olives and the first part of the production process of this oil are the same as the for the other. The difference is that once the olives are crushed, instead of producing oil by means of a mechanical separator, it is obtained by simply letting the oily part come to the surface over the watery part contained in the olives.
This slow, natural, and therefore delicate procedure allows Saggiolio not to lose any of its intense and vigorous aroma, acquiring a more robust flavor than the other oil.
Production amounts to approximately a thousand bottles per year.

Minerva, the goddess of wisdom and knowledge, “wise Minerva” (“saggia Minerva” in italian), known to the Greeks as Athena, was born a fully armed adult with a helmet on her head, springing out of the head of her father Jove who had asked Vulcan, the god of fire, to split it open with an axe since he was suffering from a sharp headache.
She once took part in a competition for the supremacy over Attica with Neptune, the god of the seas, who as his gift caused a spring of sea water to flow over the Acropolis of Athens; Minerva instead, creating somewhat of a sensation, only offered an olive tree. However, when she revealed the technique for the production of oil, all the gods of Olympus agreed in assigning the prize to the wise Minerva, while Neptune returned humiliated to the sea.
Since then olive tree has been the symbol of the goddess, and olive oil the symbol of wisdom and holiness.
